2 tbsp each olive oil, mustard, honey 2 tbsp curry powder 2 tbsp milled golden roasted flax seed 1 tsp salt ½ tsp each freshly ground pepper, garlic powder and cinnamon 4 skinless, boneless chicken breast
Preheat barbecue to medium heat. In large bowl combine oil, mustard, honey, curry powder, milled flax seed, salt, pepper, garlic powder and cinnamon. Add chicken breasts and evenly coat with mixture. Place chicken on barbecue. Turn and brush with remaining marinade and barbecue for 6-7 minutes each side. Or: Preaheat oven to 180 C (350 F), place chicken on a baking sheet that has been sprayed with non stick cooking spray and bake for 30 minutes Remove from barbecue or oven and serve with pineapple salsa.
