An excellent side dish with fish or chicken. Serves 10.
Prep Time: 18 minutes Bake Time: 15 minutes 4 sweet potatoes or yams, washed, peeled and cut 2-inch thick 1/4 cup (50 ml) brown sugar 1/4 cup (50 ml) honey 1 tsp. (5 ml) ginger, chopped 1 tsp. (5 ml) shredded orange peel 2 tbsp. (30 ml) butter
Place sweet potatoes or yams in a large saucepan with enough water and into the oven at 350 degrees and cover. Bring water to a boil. Reduce heat, cover and simmer for about 15 minutes until sweet potatoes are tender. Drain. Transfer potatoes to a greased 2-inch square baking dish. In a separate saucepan, mix brown sugar, honey, ginger, butter, and orange peel over medium heat. Bring mixture to a boil until sugar has dissolved. Boil for about 2 minutes. Remove from heat. Pour mixture and sprinkle Roasted Flax For Nutrition over potatoes. Place baking dish into the oven at 350 degrees. Bake for 15 minutes and baste occasionally with sauce. Serve immediately.
