Power Flaxseed Muffin Extreme

Each muffin contains 25g golden roasted flaxseed, 8.3 g Omega-3 fats, 7 g dietary fibre

Ingredients

1 1/3 cup (150 g) milled roasted flaxseed 1 cup (100g) all purpose flour 1 tsp baking powder 2 tbsp (15 g) brown sugar 1 tbsp lemon zest 1 1/2 cups (375 ml) skim milk 1 egg, slightly beaten 1 cup frozen or fresh blueberries or other berries

Directions

Slightly spray large muffin cup pan or line with paper cups. Preheat oven to 375F . In a large bowl mix flaxseed with flour, brown sugar, baking powder, lemon zest. Mix egg with milk and add to flour mixture. Stir quickly with only a few strokes. Add berries and just fold under. Fill muffin cups generously and bake for 20 Minutes. Cool on wire rack for 5 minutes before lifting from pan. Yields: 6 muffins
