NEW Gluten Free Pizza Crust

Makes a 12-inch pizza. Cut in 6 slices. Developed by Carol Fenster.


1 tbsp active dry yeast (about 10g) cup milk of choice (80mL), at room temperature 1 tsp sugar (12g) cup brown rice flour (80g), plus more for sprinkling 1/3 cup cornstarch, plus more for sprinkling (48g) 1 tbsp roasted milled flaxseed (7g) 2 tsp xanthan gum (6g) 1 tsp dried basil (4g) tsp salt (3g) 1 tsp cider vinegar (5mL) Your favorite pizza sauce, cheese, and toppings


[1] Preheat oven to 400¨F (200C). Generously grease a 12-inch round nonstick (gray, not black) metal pizza pan. Place racks in the bottom and middle positions of the oven. [2] Dissolve yeast and sugar in milk for five minutes. In food processor, blend all remaining ingredients, including yeast mixture, until soft dough forms. [3] Put dough on pan. Liberally sprinkle rice flour onto dough; then press dough into pan with hands, continuing to dust dough with flour to prevent sticking. Make edges thicker to contain toppings. [4] Bake pizza crust on bottom rack of oven for 10 minutes. Remove from oven and add your favorite pizza sauce, cheese, and toppings. Bake the crust on the middle rack of the oven for another 20 to 25 minutes, or until nicely browned. Cool 5 minutes on a wire rack, then cut into 6 slices and serve.
